Chicken Bruschetta

Easy chicken breast bruschetta recipe.

It was Friday afternoon, and I craved a hot and cheesy lunch.  Grill cheese… No. I wanted something with a bit more substance.  Then I remembered the left over thin cut chicken breast scampi from last night’s dinner.  Hmmm…. What could I put together really quickly with chicken, tomatoes, bread, and mozzerella.  Ah!  Chicken breast bruschetta.  Perfect for a quick lunch.  So yummy!

Chicken Bruschetta

Ingredients:
4 Thin Cut Chicken Breast, Cooked
4  Bread Slices
2 Tomatoes Diced
1 Teaspoon Olive Oil
1 Tablespoon Parsley
2 Teaspoons Basil
1/4 Teaspoon Sea Salt
1/2 Teaspoon Garlic Powder
1/4 Cup Mozzarella Cheese (optional)

Preheat your oven to 375. Cook your chicken breast in a fry pan for about 12-15 minutes. Or re-heat in the oven for about 10 minutes if your chickn breast were in the refrigerator overnight (I had some left over chicken scampi). Rinse and dry your tomatoes. Dice your tomatoes. Mix tomatoes, basil, parsley, garlic powder, and salt. Place bread slices on a sheet pan and toast in the oven for about 4 to 5 minutes. Remove bread slices and allow to cool for about 10 minutes. Layer your chicken breast, diced tomatoes, and then cover with mozzerella cheese. Cook your chicken bruschetta in the oven for about 15 minutes. Remove from the oven and let rest for about 2 to 3 minutes. Serves 2.
