Thanksgiving main course a turkey, ham, brisket, prime rib, a roast or chicken?
Here I am standing in my grocery store meat section, just cannot make up my mind. Will keep it small this year, that’s for sure. Maybe a small turkey, a large turkey breast, ham, pork shoulder, brisket (one of my personal favorites), prime rib, or a beef roast. Maybe I’ll look for a turducken recipe. The turkey stuffed with a duck, stuffed with a chicken stuffed with stuffing. Hmmm…. Plenty of time for experimenting. So many options….
All of a sudden I started remembering Thanksgiving dinners growing up where there was always turkey, a ham and or brisket. Oh yes, ham covered in cloves and pineapple rings. I could almost smell it. How about a large turkey breast (which I will put in a brine overnight, you can find plenty of recipes online) and a pork shoulder. Yes, pulled pork! Finally, a decision on my main course. Although, I can’t help thinking I should have grabbed that spiral ham too.

Beef Tenderloin with sautéed mushrooms and onions. Salmon roasted in a lemon, olive oil and a white wine sauce. Or Salmon in a mustard sauce. Stuffed Cornish Game Hens with gravy. Lasagna with roasted tomatoes and basil, mozzarella and ricotta.
