Tomato and Arugula Salad

Easy arugula summer salad.

Try this easy recipe for our delicious fresh tomato, arugula, and parmigiano-reggiano salad.

Plated Tomato and Arugula

Ingredients:
3 Medium Tomatoes
1 Bag of Arugula
2 Tablespoons Olive Oil
2 Teaspoons Dried Basil
Garnish with Parmigiano-Reggiano

Clean your tomatoes. Some rinse their tomatoes with cold running water and dry, I prefer a 3 to 1 vinegar & water wash, then rinse with cold running water, and dry. Cut tomatoes into wedges. Rinse and dry arugula (a salad spinner is a great time saver). Combine 2 tablespoon of olive oil and dried basil in a small bowl. Plate arugula, and add tomato wedges. Drizzle on basil olive oil, then garnish with Parmigiano-Reggiano. Love this easy salad on a hot summer day. Serves 4.

Fresh basil, olives, cooked or grilled shrimp or diced chicken. So many yummy options.
